Hey there Picky peeps! I gotta say, we had quite a few wins on the dinner front this week! We tried several new recipes and added a lot of kickass tastiness to our repertoire. See what we ate this week and what we spent.

Now here’s what we ate and spent this week!
Breakfast: Breakfast cookies. I baked these bad boys last weekend and ate them from the fridge this morning. They’re extremely filling and oh-so-tasty.
Lunch: Garlic honey grilled chicken. Y’ALL. This is a dish we grilled for Sunday lunch and oh-my-gee is it tasty. I marinated the chicken in a mixture of Sriracha, soy, garlic, honey, and lime before Mr. Picky Pincher grilled it for a smoky finish. We served it with grilled tomatoes, corn, and grilled avocados. Spoiler altert: grilled avocado is disgusting and I regret that part.
But everything else was spectacular! The original recipe called for shrimp but we opted for chicken. Recipe here if you want to try it out.
Dinner: Seared skirt steak with cilantro paste. This was another win! We had skirt steak in our freezer, so this was the perfect excuse to use it. Mr. Picky Pincher seasoned and seared the skirt steak and I made a most-tasty cilantro paste to top the steak. We also made some grilled onions and it was stupendous.
Breakfast: Goat cheese muffins and chocolate zucchini muffins. I found some muffins in our freezer stash that needed to be eaten. Mr. Picky Pincher had goat cheese and leek muffins and I had the last of some chocolate zucchini muffins. Heavennnn.
Lunch: Leftover skirt steak. Get it my mouthhhhhh.
Dinner: Thai curry vegetable soup. This was a new recipe that I was kinda nervous to make. Weeknight soups can be hit-or-miss since soups usually need to sit for a long time to develop flavor.
I followed this recipe, but it was still a little lacking. I tossed in some extra powdered ginger, garlic powder, onion powder, and a hint of Worcestershire. And bam! It tasted amazing. 🙂
But ho-ly shiz, you guys. This soup is spicy. It called for two tablespoons of red curry paste, which I put in. Unfortunately we bought a different brand of red curry paste and didn’t know that this was a spicy brand!
It tasted amazing, but we had runny eyes and noses after dinner. Whoo!
Breakfast: Tacos. Is there anything better than a breakfast taco? We use Mr. Picky Pincher’s homemade black beans for these guys and they’re divine.
Lunch: Leftover soup

Dinner: Feta burger patties with a creamy tomato sauce. Yesyesyesyesyes. This was the big win of the week, y’all. I used this recipe and it was absolutely perfect. The burger patties have feta in them, which gives them a great texture and flavor. The cream sauce is the real winner, though: it’s hearty, slightly tangy, and oh-so-yummy on the burger patties. The recipe called to serve this with cabbage, which Mr. Picky Pincher ate. I abhor cabbage, so I paired mine with a sliced avocado. When we make this again I’ll opt for broccoli instead, though.
Breakfast: Ploughman’s scones. I baked these last weekend and defrosted them for today’s breakfast. They’re cheddar-thyme scones that are perfect with just a hint of salted butter. Mmmm.
Lunch: Leftover burger patties in cream sauce. I WANT MORE.
Dinner: Chipotle! Yup, we ate out today. I had an insane day at work and the last thing I wanted to do was cook. We swung by Chipotle on our way to REI to buy a birthday present for my dad, so we consolidated trips to save gas. I can never completely finish a blessed Chipotle burrito in one sitting, so I do have lunch for tomorrow!
Breakfast: Bagels. I let myself sleep in today since my weekend will be pretty crazy. That meant I scrambled a bit to make breakfast. Grits were on the menu, but that just wasn’t happening for me. I whipped out an everything bagel and topped it with cream cheese. Boom–breakfast.
Lunch: Leftover Chipotle burrito. Not healthy, but damn if it isn’t delicious!
Dinner: Not sure! Mr. Picky Pincher will grill himself some leftover steak. I’ll be visiting family this weekend and then working in that area next week, so it’s gonna be cuh-razy! I’ll probs grab dinner on the road or with my fam.

Goals for next week
Mkay, so we are over budget for the week (I like to see our bill around $80). But! It should be noted that this week we stocked up on bulk flour, almond flour (it was on sale), and coffee. So eh, I’m not too mad about this. We’ll make up for these costs over the coming weeks.
