Shoo-eee. It was another busy weekend, y’all. Mr. Picky Pincher was out of town, so I was left to my own Picky little devices. I got quite a lot done, but man, it never feels like the weekend is long enough. Sigh!

Butter pecan granola
We were running low on granola, so I made a new batch. Yogurt and granola has become a favorite snack of ours and we’ve been chomping through this stuff like crazy! A few people have asked for my recipe for the granola, so here it is. I got it from an old library cookbook. 🙂
Butter pecan granola
- ½ cup butter
- ¼ cup honey
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- 3 cups oats
- 1 ½ cups pecans
- ½ cup ground flax seed
- 1 cup raisins
- Mix all ingredients
- Bake at 325 for 20 minutes
Once the granola cools, I store it in a Ziploc bag in the fridge.
Mr. Picky Pincher has become a yogurt-eating fiend, so I made more of my homemade yogurt this weekend. This time I used my yogurt starter with the whey in it and the texture was a lot better. So yes, for those of you who were curious, you should use non-Greek yogurt as your starter! It’ll still make yogurt if you use Greek yogurt, but the texture will be kinda grainy.

Coconut cream pie cupcakes
I broke the Baking Ban and baked some cupcakes this weekend! I’ll talk about this later in the blog, but I got a fancy cake holder at the thrift store. It looked so sad and empty, so I had to fill it with some tasty baked goods. 🙂
I made these coconut cream pie cupcakes using ingredients from our pantry. I made a coconut cream, which I used to fill the core of the cupcake (I don’t have a cupcake corer, so I used a butter knife to remove the centers). The cupcake itself was a vanilla cupcake (recipe here) with a green coconut frosting. For extra fanciness, I topped the cupcakes with toasted coconut. 🙂
These were fuh-lippin’ delicious! I messed up the frosting a little bit, but they still turned out amazing! They’re toasty and warm-tasting, which is perfect for all of the dark, stormy weather we’ve had lately.
We’ve eaten through our supply of pita bread, so it was time to make some more! Today I made a double batch since we’re using these pitas in place of sliced bread in a lot of our snacks and meals.
YOU GUYS. You. Guys. I discovered the best food ever today. In my pursuit to eat healthier, I found this recipe for roasted garlic parmesan carrot fries. I’m not too partial to carrots, but I love me some French fries, so I gave them a try.
These were so easy to put together and I ate an entire sheet of them for lunch. Zero regrets. They kinda taste like a milder sweet potato fry, but with amazing crunchy, cheesy, garlicky seasoning. Sooooo good. I’d highly recommend these if you want the taste of delicious French fries without the calories. 🙂
This week we’re having chicken salad sandwiches with an Italian kale soup for dinner. I like cooking as little as possible on the weekdays, so I cooked this bad boy ahead of time. It’s a nice Italian soup chock full of veggies and, of course, plenty of Italian sausage. It’s pretty tasty, I must say! Recipe here if you’d like to try it yourself.
Peanut butter chocolate chip yogurt
Um, since I ate all of my carrot fries, I needed another snack for this coming week. I flavored some leftover yogurt with peanut butter powder, honey, crushed peanuts, and ground chocolate chips. I ended up with a mighty tasty peanut butter chocolate chip yogurt for snacking! This is perfect for fighting my chocolate cravings in a less-horrible way. I also use dark chocolate so it’s a little less unhealthy. Right?
I’m a Rockstar!!
GUYS. I am beyond thrilled to announce that I was featured on Rockstar Finance this week. I’ve been pursuing this as a goal since I started blogging over a year ago. I didn’t think it was ever going to happen and I’d lost faith. I wasn’t sure anybody really wanted to read my stuff, so I was kinda in a funk.
BUT I DID IT, HOLY CRAP.
When J$ of Rockstar emailed me with the news, I replied to his email with “I love you.” In hindsight that was probably weird for him. Sorry, J$! Here’s a very flattering photo I took the second I got the news. I’d just finished working out and was rockin’ a “natural glow” (coughsweatcough).
Thrift store scores
I needed a cheese grater that I could destroy for my DIY beeswax cling wraps, so I visited the good ol’ thrift store. I was pretty ticked off when I realized they didn’t have any cheese graters, so I almost left empty-handed. Then I started perusing the kitchen wares and found a treasure trove!
Someone broke my candy thermometer a while back and I’ve been meaning to replace it. The thrift store had a brand-spanking-new candy thermometer! Woop woop! I also got a metal bowl for cooking a double boiler. Right now I’m using a glass bowl, which doesn’t conduct heat as well, and leads to curdled chocolate. Improving my double boiler is crucial to my ultimate goal of making fancy chocolates. 🙂
The best find of the day was a glass cake holder. I’ve been wanting one for so long, but at $40 a pop on Amazon, it was low on my list of priorities. I’ve been scouring thrift stores for months and haven’t seen a-one. Today I laid my eyes on this beauty, which was selling for $12.
I snatched this sucker up so fast! I love the clean design and I’m thrilled I got such a good deal on it. I did have to wash it pretty thoroughly in Goo-Gone since it was covered in tape, but now it’s in wonderful condition.
Naturally I had to fill the cake holder with cupcakes to show it off! 😉
I spent most of my Saturday filming a new video for my YouTube channel. I’m trying to be better about making videos, but damn does it take a lot of work! Anyhoo, I made a video on 5 frugal five-minute DIY projects to save money around the house. I should have spent more time on the editing in some spots, but overall it’s an okay video. 🙂
New site layout!
In case you haven’t noticed, I have a new site layout for Picky Pinchers! I was having a lot of difficulty with the designer of my last website template. It had pretty much gotten to the point where I couldn’t change anything with the site’s layout. So I switched over to the Divi theme with Elegant Themes. It cost $80, but I paid for it with my freelance monies, so it stung oh-so-slightly less.
There have been hiccups with the new theme–a lot of hiccups, actually– but I’m getting everything squared away. I think the site looks a lot cleaner and more modern now, so I’m a happy camper. 🙂 Oh, and I can actually, you know, make changes to the site. That’s a big win.

Zap and I were cuddly as two bugs in a rug this weekend. It stormed a lot on Saturday, so we snuggled and watched Project Runway. 🙂
But then he got tired of cuddling and gave me a shot of his bid’ness.
It was 9 pm on Saturday night and I realized I hadn’t done anything for myself that day. I decided to treat mah’self to a nice, hot bath. Except I couldn’t enjoy it because I had a peeper. For 30 minutes. 30 minutes of just staring at me in the bathtub. So weird. (And if I close the door he’ll start yowling; trust me, I’ve tried)
